Since 1885, our family has farmed a 140-acre homestead in Amherst Junction, Wisconsin. For five generations, the land has provided food for our tables and a life very few have had the privilege to experience. Through all of life's challenges, the farm has been at the heart of our memories and the source of many of God's blessings.
With each passing generation, The Lutz Family Farm has evolved over time, but one thing has remained the same: Our Passion.
Together, we're continuing to live off of the land our grandfathers cleared over 150 years ago. Our Heritage truly is a lifestyle of sustainability, hard work, and faith.
We're honored to be able to share a portion of that experience with you! From our farm to your freezer, we want you to enjoy the benefits of locally grown beef delivered right to your door. We invite you to eat the way our grandparents did.
We work directly with our clients to help them select the cuts of meat and collections that best fit their needs. Our Heritage Beef products are custom to order; we work directly with our local butcher to ensure you're 100% satisfied with your order.
All of our meat is processed and packaged at a federally inspected meat processing plant located in Stevens Point, Wisconsin.
We're here to help you understand and prepare our products. It is our goal to educate you and our readers on the art of cooking as close to nature as possible.
While we believe that animals raised as close to the way God intended is best, we also appreciate the benefits of modern agriculture. While none of the animals are ever treated with unnecessary hormones or antibiotics, we do raise Holstein Steers who are fed a diet of conventional grains and alfalfa-grass mixture.
If you're a descendant of Leo August Lutz (1901-1998) & Florence Meta Pohl Lutz (1905-2006) or Alfred E. Wolkenhauer (1911-1007) & Florence E. Gaubish (1911-1997) please email us about a family discount! We are very proud of our German-Prussian roots! Check us out on Ancestry.com
All of our ordering can be done online. Due to seasons quantities, there will likely be a waiting list. Currently, we butcher our beef four times a year.
We know you're busy and preparing meals is hard enough. We deliver your meat directly to your doorstep if you live within 25-miles of our farm. We'll even put it in your freezer for you! Free Shipping on orders over $100 dollars.* Must live within 25 Miles of Amherst & Medford, Wisconsin.
Traditionally, our family has preferred Holsteins for their premium milk production, however, we have begun to raise Herford-Angus Crosses, also known as Black Baldys, for our Grass Fed customers. Our chickens always have access to grass and sunlight and are purchased in Spring as Cornish-Cross Pullets & butchered in the Fall.
Hanging weight is generally 400-500 lbs. The yield or final weight will be roughly 60-65% of the hanging weight. The final price you pay depends entirely on the size of the animal and it’s hanging weight. The final balance due will be determined after the animals have been taken to the butchers.

How long until delivery?:
We will call you about 2 weeks before the beef is ready for delivery, with a drop-off date and a balance due based upon the animal’s hanging weight. All balances are due in full at time of delivery and can be paid online. Delivery times and dates are firm as we do not have enough freezer space to store anyone’s beef for lengthy periods of time. Thank you!
What do I get from a Half Beef?:
How an animal is butchered can dramatically affect the yield. Whether bones are left in, how closely the butcher trims the surface fat, and how much fat is left in the ground meat is a big part of what determines the yield. The yield is typically 60-65% of the hanging weight so, you can expect 240 to 325 lbs of finished cuts depending on the size of the animal for a HALF animal, 120-165 lbs for a QUARTER animal.
Boneless or Bone-In?:
We tend to butcher more bonelessly on quicker cooking cuts, and tend to leave the bones in on longer cooking cuts where the meat will fall off the bone, thereby maximizing the actual amount of meat you are able to eat. It is important to note that the amount of edible meat does not change with boneless cuts, and boneless cuts take up less room in your freezer.
We also tend to have the butcher leave less fat on the cuts and use less fat in the ground beef opting for 85-95% lean ground beef.
How much freezer space for a half beef?:
Usually a half beef takes up about 10 cu. ft. of “upright” freezer space. The rule of thumb is 1 cubic foot of freezer space for every 35-40 lbs of cut and wrapped meat
What cuts will I receive?:
Working closely with our butcher we determined the best way to cut the beef halves in order to give you the highest quality cuts, the greatest possible yield, and a good variety of cuts to keep your beef dinners interesting, and typically includes the following cuts:
• Tenderloin Steaks (Filet Mignon) • Ribeye Steaks • NY Strip Steaks • Sirloin Steaks • London Broil Steaks • Flank, Skirt & Hangar Steaks • Short Ribs • Shoulder / Rump Roasts • Chuck Roasts • Briskets • Shanks (Soup Bones) • Liver in 1 lb. packages • Stew Meat (in 1 lb. pkgs) • Ground Beef (in 1 lb. packages) • Top & Bottom Round Roasts. We offer three collections: Heritage Collection, Steak Lover, & Family Pack.
We would love to hear from you! Thank you for taking the time to send us a message. We will get back to you shortly. Please feel free to call!
